The chicken cooks more evenly and in less time. This is relatively easy, turn the chicken over - breastbone down, and cut out the spine. Remove the backbone from your chicken and flatten it prior to cooking. It is really tasty - and if you have all the ingredients, really simple to make. This is a recipe I tried and modified slightly.
